Bring to a boil and cook potatoes until tender, 15 to 18 minutes. Drain and transfer to a large bowl. Toss with chives, mustard, vinegar and 1 tablespoon oil. Season with salt and pepper. Meanwhile, cook steak. Heat remaining two tablespoons oil in a large skillet over medium-high heat. Season steak with coriander, salt and pepper. Cook, turning once, until an instant-read thermometer inserted into the thickest part reads 130 degrees for medium rare (about 3 to 4 minutes per side.) Transfer to a cutting board and let rest five minutes, and then slice. Serve with potatoes and garnish with chives. Summer Energy Tips ✹ Use a programmable thermostat to reduce the amount of cooling while you're away. ✹ Keep out unwanted hot, humid air: - If caulk around windows and doors is cracked or the weatherstripping is fl at or peeling, replace the old material. - Seal around wiring and plumbing penetrations in fl oors and walls. Use caulk for small holes and expanding foam for larger areas. - Consider installing double-pane or storm windows and insulated or storm doors. - Don't forget the insulation in the attic as well as fl oors over unconditioned basements, garages or crawl spaces. We recommend R-30 for the attic, R-19 for fl oors over unheated basements or crawl spaces and R-13 for outside walls. ✹ Clean or replace dirty air filters to improve the air flow in your cooling system. ✹ Have your cooling system professionally serviced to keep it running at top efficiency. If your system is old, you should be able to save money with a new, more efficient system. ✹ Don't block air outlets and return registers with furniture, draperies, doors or other obstacles. ✹ Close draperies or blinds on windows that receive direct sunlight to keep the heat out. ✹ Use a small room fan or ceiling fan to circulate and distribute cooled air.
