Summer Vegetable Maque Choux
Ingredients
2 tablespoons butter
2 medium onions, diced
4 ears of corn, cleaned
1 green bell pepper, diced
1 jalapeno, diced
2 cloves garlic, diced
2 Roma tomatoes, diced
Hot sauce to taste
3 oz. heavy cream
Instructions
In a large skillet, melt the butter
and begin sautéing onions, corn and
peppers. Once the onions become
translucent, add the garlic and cook
for an additional 2 minutes. Add the
tomatoes, heavy cream, hot sauce, salt
and pepper. Cook for an additional
few minutes until the cream begins to
thicken and remove from the heat.
